watch it while I work

I missed the balcony kiss due to the fact that the subway system was running slow this morning, {BAH!} but that doesn't stop me from live streaming the Royal Wedding at work! I will have this baby going until it's all over. What an awesome historical even to wake up to this morning. Though I didn't get up at 3, my 6am alarm was good enough for me to catch the main event, and I couldn't stop smiling the entire time! I loved Kate's dress and OH the hats! I also love to secretly pretend I know what they're whispering to each other as they walk down that long aisle...

I have heard so much about the Royal Wedding lately and it's driving me crazy! I am very excited to watch it, but every other television channel has all things Royal on it, it's insanity! I missed the last epic Diana wedding by just a few years, and am thrilled I am around for this one {and to see the dress and all out fashion!}. The 3am start however? Not a big fan of that!

Will you all be getting up to watch this event or tune in later in the day?

footloose and laptop free

Hello my lovelies! I have today off for the Easter Holiday, and I'm gone to visit my family. Along with my weekend bag, I usually lug my laptop with me, but because I have been a bit overworked this week and on the computer 24/7 it seems, I have decided to free myself of the extra shoulder weight! Pardon my absence, I will be back in a few short days, and will miss you dearly.

Out of every palette, Easter colours - I have loved forever. Give me sea foam green any day! Butter yellow and lilac? Heck, yes. My favourite children's books are Peter Rabbit, so this may not surprise you that the animals associated with Easter like little ducks & bunnies all running around on packaging and posters, love...love...LOVE! {did you see the little finger puppets above?! You can find these at the Purl Bee.} Let's not even get started on the candy part of this holiday...and just say all around Easter rocks! Can't wait for friday.

breakfast of champs

I love all grain-like, warm breakfast cereals. Oatmeal, oat bran, buckwheat...you name it, I love it! So when I saw this post on Joy the Baker, it sparked many ideas. Sometimes on weekends when I don't have time to get groceries, I scrounge my fridge and cupboards to see what I can manage to pull together for breakfast. This morning, with quinoa in mind, I realized I has some coconut, cinnamon dusted pecans {amazing, btw!} and apples that I could saute up in butter and cinnamon. Oh yea...and don't forget the maple syrup. It was awesome! Not quite the same as Joy made, but I figure, that's the fun in cooking sometimes. With quinoa, you could experiment and have so many different variations, depending on the season and what's in your cupboards. Here's my version if you're curious:

Breakfast Quinoa {or I like to call Breakfast of Champs}
1 cup of quinoa {you can make it with red, yellow etc.}
2 cups of water
pinch of salt
1 whole apple, chopped
1 tsp butter to sauté with
3 tablespoons of cinnamon-dusted pecans
1 tsp nutmeg
cinnamon {to taste}
coconut {to taste}
maple syrup {to taste}

Rinse dry quinoa.  Place quinoa, salt, and water in a medium pot.  Bring to a boil over medium heat. While quinoa is boiling, add butter to small saute pan. Once butter starts to simmer, place apples in and dust with cinnamon. On low-medium heat, saute apples until soft. Simmer the quinoa until all of the water is absorbed.  Stir occasionally.  Turn off element and allow quinoa to cool slightly.

After quinoa has cooled slightly, sprinkle in 1 tsp of nutmeg, and 1 tsp of cinnamon and stir. Add in sautéed apples. Spoon into any size bowl you like. Sprinkle with crushed pecans, coconut and maple syrup to your liking! Enjoy!

Note: You could toast the coconut, I just got lazy! If you'd like to, follow Joy's instructions I've copied here.
*Place a rack in the center of the oven and preheat to 375 degrees F.  Line a baking sheet with parchment paper and spread coconut in a single layer across the sheet.  Toast the coconut.  Keep a close eye on the coconut, it could burn quickly.  Coconut will be browned and fragrant after about 6 minutes.  Remove from the oven and place in a small bowl.

Ahhh...It's finally the weekend! I got myself some extra sleep this morning and feel refreshed and ready to enjoy the next few days. Even though it's gloomy and rainy out, it won't stop me from having some fun, and dreaming about long, sunny summer days! I'm off to get ready to go to one of my favourite stores in Toronto. The Paper Place! I'm finishing up a wedding invite package for a client, and am getting very excited to finally see it printed. So I just have to get the paper and envelopes, and find something glamorous to wrap around each printed package...Can't wait to show you all when it's finished!

Why hello there, and happy weekend! Right now I am eagerly awaiting the arrival of my parents, and my aunt to come visit me for a great day in the city. I'm so excited because my aunt has never come to visit us out of all the many years we've lived in Ontario! I also wanted to make it a little special by having a few sweet treats to welcome them, including some strawberries and apple cinnamon & coconut muffins, made fresh by yours truly! {let me know if you're interested in the recipe!} What a great way to spend a saturday, and I hope yours is just as sweet!

I said thank goodness

It's friday! I have been oh-so-absent this week on here. I can't believe it, but let's just add it up to stress and a demanding schedule. In fact, the next few weeks are looking just as crazy, so bear with me! I keep telling myself, after this is all over, it's only days before I go on vacation for 2 whole weeks! So it'll all be worth it in the end...

P.S. Isn't this photo great? Love the belts, grey tulle skirt and a pop of citrus green...perfect for spring!
